Our fresh seafood supply from the Louisiana marshes and the Gulf of Mexico is threatened due to the BP oil spill. I am afraid that we will look back on dishes like this only with nostalgia if something isn't done soon. We have always had such an abundance - and this type of food is interwoven into the fabric of our lives. I wanted to memorialize three of our unique ways of eating our local seafood, our shrimp, oysters and crawfish and have created these paintings. I hope you enjoy!
